Long Jing, or "Dragon Well", is one of the most famous varieties of green tea originating from the West Lake Area (Xi Hu) in Hangzhou, Zhejiang Province, China. In 2024, a new crop of this tea was harvested, which promises high quality and unique taste characteristics.

The production process
 
The harvest of Long Jing 2024 was harvested on March 25, before the Qingming holiday. Tea is made from the Qun Ti Zhong (群体种) variety, which is famous for its ability to give rich and fragrant infusions. The leaves are harvested by hand and go through a roasting process, which prevents fermentation and preserves freshness.

Appearance and fragrance
  
The leaves of Long Jing have a characteristic flat shape and light green color. The infusion has a transparent golden hue and a rich aroma with notes of roasted chestnut and fresh herbs. The aroma of this tea creates a feeling of lightness and freshness.

Taste and properties

It is recommended to use water with a temperature of about 80 °C to brew Long Jing. 5-6 grams of tea is enough for one serving (150-200 ml). The first brew is used to warm up the dishes and clean the tea; it should be drained. For the second brew, the infusion time is 20-30 seconds, and for the third — about 1 minute. Tea can be brewed up to five times, increasing the infusion time each time.
